Bread & Butter Pickles

... because we're still getting cucumbers in, though thankfully they are slowing (just in time for corn and tomatoes to pick up!)

15 to 18 Pickling Cucumbers
2 to 3 Medium Onions
1/2 c. Pickling Salt
3 c. Sugar
2 c. White Vinegar
2 c. Cider Vinegar
2 tsp. Mustard Seeds
1 tsp. Celery Seeds
1 tsp. Ground Turmeric



Wash & Slice the cucumbers & Onions.

Layer in large bowl with salt then top with enough cool water to cover.  let sit for 2+ hours then drain and rinse thoroughly.

Put Vinegars, Sugar and spices in a large pot and bring to a boil, stirring constantly until sugar is dissolved.  Once it reaches a boil, add cucumbers and onions for 3 minutes then remove from heat.  

Pack veggies and syrup into sterilized jars, leaving 1/2 in. headspace and process for 30 minutes.  Let cool completely before labeling and storing.
